Recipe - HeyHey's Calzone

Last week I told you how to make your own pizza, and dough. How about I tell you what else you can use that dough for!? Exciting stuff, I know! There comes a time when you need a break from the ho-hum pizza doldrums. For our little munchkins, we often make the same food, but cut it differently or arrange it differently. Well, let's do it for ourselves, shall we?

Prep Time: 20 minutes
Baking Time: 25 minutes
Servings: 4


Ingredients
Pizza dough
1 onion, thinly sliced
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 lbs Italian sausage, casings removed
1 cup shredded mozzarella
1 cup marinara sauce
1 egg, for the egg wash

Directions
1. Make the pizza dough. Let it proof.
2. Preheat oven to 375 degrees.
3. Cook sausage in a skillet until no longer pink on the outside. It should be 70-80% cooked. Remove from skillet and set aside.
4. Use about 1/2 of the dough from the recipe above. (I saved the other half in the fridge for cinnamon rolls. Recipe to come!). I split this remaining ball in half and made two large calzones. If you want to make more individualized portions, you can split the dough accordingly. Sprinkle some flour on a flat surface and roll the dough into a circle, 10-12" diameter. Transfer the dough to a parchment paper lined cookie sheet. One with a rim would be best since there may be some juices oozing out while its baking.
5. Spread some marinara sauce on half of each dough round, leaving the outer edge clean so you can fold it. Then layer on the sausage, onion, peppers, and cheese. Fold dough over and enclose your pocket. Now seal the edges by pinching it closed. Lightly egg wash the outside. Cut a few slits in the top to let some of the steam escape during the baking process.
6. Put in the oven and bake for 18-25 minutes, depending on the size. It should turn a nice golden brown on the outside.

If you don't use all of the fillings, don't worry! Save it for omelets the next morning or a stir fry the next night. It's really handy to have pre-chopped veggies ready to go!

The bonus features of this dinner:
- There's minimal clean up. One pan, maybe a cookie sheet if some of the juices ran off of the parchment paper and onto the pan, but that's it! Everything else gets thrown in the dishwasher. It's a snap!
- Most of it is stuff you have on hand. If you don't, substitute in something you do. Think of what you would put on a pizza.
- Everyone mowed down this dinner, and we even fought over who got to eat the leftovers for lunch the next day.

I guess I know what I'm making for dinner tonight because as I'm writing this Hubby asks "When are you making that again?".
