Pumpkin Banana Bread

YESSS!!!!  IT'S ANOTHER BANANA BREAD RECIPE!!

I think Heather and I are truly in love with the bread of bananas.  You COULD say we've gone...bananas...for banana bread.  Eh?  Eh?  Anyone? No? Bad joke? Moving on....

In the constant attempt to "work whatcha got" (no joke...that should be our motto.  Diapers and Divas...working what we got and eating banana bread), I had this can of pumpkin from the holidays.  Not one to let a good can of pumpkin to go to waste, or the bowl of brown bananas...I thought I'd combine 2 of my favorite things into one of my most favorite things!  Everybody got that?  Ok...Moving on....again...



So here's what you do to get this heavenly treat.  You take you're basic banana bread recipe (found here) and you substitue 2 of the bananas for about a 1/2 cup to a cup of pureed pumkin.  The more pumpkin you put in, the stronger the flavor and the longer it will have to cook.  It makes the bread super moist...so just be aware that cooking times may change.  I also shook in a couple extra spices like cinnamon, ginger, nutmeg....kinda all the basics that you would for pumpkin pie.  Or you could just do a couple shakes of pumpkin pie spice...even easier.

SOOOO GOOOOD.  It's been ugly and stormy and SO not Spring-like here in the NJ....and this was the perfect little treat for a cold day.  The boys were hanging out in their pajamas and we were all enjoying a slice and sipping on hot cocoa.  Hopefully it was one of our last Winter moments this year...and a fantastic one at that!
