Yes, you read that right... BLOATMEAL! Hubby concocted a new version of oatmeal cookies but instead of raisins, he got real crazy and put in dried blueberries! YUM! We are a fruity family...and blueberries (or bloobs as we call them) are one of our favorites. I bought a bag of the dried bloobs at Costco a couple weeks ago and they're great to plop into our oatmeal for an added yum-factor. It's a big bag that cost around $8. I don't think we've made much of a dent in it, either. Gotta love Costco.
I think this might be my new favorite oatmeal cookie... ever. They're so good! The recipe made 4 dozen cookies and we have maybe a dozen left... They've been in our house less than a week!
So without further ado, here's the recipe for the Blueberry Oatmeal Cookies, or Bloatmeal Cookies as Hubby has now dubbed them.
1 Cup (2 sticks) margarine or butter, softened
1 Cup firmly packed brown sugar
1/2 Cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 Cups All-Purpose Flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
3 cups old fashioned uncooked oatmeal / oats / Quaker Oats
1 cup dried blueberries
1. Heat oven to 350*F
2. Beat together margarine and sugars until creamy
3. Add eggs and vanilla; beat well.
4. Add combined flour, baking soda, cinnamon, and salt; mix well.
5. Stir in oats and blueberries; mix well.
6. Drop by rounded tablespoonfuls onto ungreased cookie sheet.
7. Bake 10-12 minutes or until golden brown.
8. Cool 1 minutes on the cookie sheet; remove to wire rack
The recipe makes about 4 dozen.
